Mushroom and Pepper Fajitas
Ingredients (makes 4 fajitas):
2 medium red bell peppers, cut into strips
100 g (4 oz) fresh mushrooms, sliced (about 1 and 1/4 cup)
1 medium red onion, sliced
1 tbsp olive oil
1/2 tsp curry powder
1/2 tsp chilli powder
1/4 tsp cumin
4 warm Low Protein Flour Tortillas
2-3 tbsp salsa
2-3 tbsp fresh cilantro, chopped
Method:
1. Fry the peppers, mushrooms and red onion in olive oil for 3-5 minutes.
2. Add the spices and continue to cook for 2 more minutes or until vegetables are tender. Stir in the salsa and fresh cilantro and cook for 1-2 minutes.
3. Place a few spoonfuls of the mixture into a flour tortilla and wrap to create a fajita.
