Fried Rice with a Hot Twist
Ingredients (for 2 servings):
150 g (5 oz) Loprofin Rice (about 2/3 cup when measured dry), cooked
1 medium spring onion, chopped
1 medium red bell pepper, chopped
100 g (3 oz) bok choi, chopped
(1 1/2 cups chopped)
1 tsp salt
1/2 tsp garlic purée (or about 1 small garlic clove, chopped)
2 tbsp olive oil
1 tbsp light soy sauce
Salt and pepper, to taste
Method:
1. Heat a wok or non-stick pan and add 2 tbsp of olive oil.
2. When the oil is heated, add the onion, peppers, bok choi, garlic purée and cook for 2 minutes, stirring continuously.
3. Add the cooked Loprofin Rice to the pan and cook for 3-4 minutes, stirring continuously using a wooden spoon.
4. Stir in the soy sauce.
5. Season with salt and pepper to taste.
