Island Rice
Ingredients:
• 4 cups vegetable stock
• 8 spring onions, finely chopped
• 2 celery stalks-cut lengthwise, finely chopped
• 1 tsp. Mrs. Dash
• 10 oz. Loprofin rice
• 1 tsp. salt
• 3 oz. string beans- cut into 3 pieces
• 2 medium tomatoes-cut into chunks
• 5 oz. pineapple rings-drained and cut into pieces
Directions:
- Bring the stock to a boil in a saucepan over medium heat. Add the onions, celery and herbs. Boil for 2 minutes to flavor the liquid.
- Rinse the rice under sold water to remove some of the starch, add to the stock with the salt. Cook uncovered stirring occasionally for 8 minutes but allowing the rice to retain a moist consistency. Add more water if necessary.
- Stir the chopped tomato and pineapple pieces into the rice.
Serving Suggestion:
Serve topped with copped chives or spring onions and a green salad.
