Vegetable Kabobs
Ingredients:
• 1 medium zucchini, thinly sliced
• 4 button mushrooms
• 1 large tomato, quartered
• 1 grapefruit, peeled and cut into 4 segments
• 1 T. olive oil
• 2 oz. Loprofin Spaghetti
• 1 jar (26 oz.) chunky vegetable pasta sauce (from allowed list)
Directions:
- Thread the prepared ingredients onto 2 skewers and lightly brush with oil.
- Grill over medium heat for 8-10 minutes, turning frequently.
- Meanwhile, boil the spaghetti for 8-10 minutes, or until just softened. Drain and place on a serving plate.
- Heat the pasta sauce and allow to cool slightly.
Serving Suggestion:
Serve the vegetable kabobs on top of the spaghetti and pour the sauce over.
