Loprofin Cheese Biscuits
Ingredients:
180 g (1 1/2 cups) Loprofin Baking Mix
150 mL (5 fl oz) Coffee Rich or liquid Coffeemate
1 stick butter or margarine
2 1/2 tsp baking powder
45 g (1 1/2 oz) low protein cheddar cheese, finely shredded
1 tsp salt
1 tsp sugar
Preparation:
Preheat oven to 400°F
- Put the Loprofin Baking Mix, salt, baking powder, and sugar in a medium mixing bowl. Mix well.
- Rub in the butter or margarine until it resembles fine breadcrumbs. Stir in the shredded cheese. Make a well in the middle and pour in the Coffee Rich. Mix very well using a large spoon. Let stand for 1 to 2 minutes.
- Dust the work surface and the dough lightly with the baking mix. Roll out to about 3/4 inch thick. Cut into rounds with a 2-inch cutter.
- Place on greased baking sheet and cook for about 10-15 minutes until they rise and brown on the bottom. The biscuits freeze well after they have cooled.
Yields 12-14 two-inch biscuits.
