Creamy Pasta Salad
Ingredients (for 2 servings):
150 g (5 oz) Loprofin Penne (measured dry), cooked
50 g (2 oz) cherry tomatoes (1/3 cup)
50 g (2 oz) chopped olives, pitted (1/4 cup)
2 tbsp fresh chives
1 handful of fresh basil, chopped
1 garlic clove, crushed
50 g (2 oz) cucumber (about half of a small cucumber, diced)
50 g (2 oz) salad cream* (1/4 cup)
Salt and pepper to taste
*Salad cream is similar to mayonnaise but with no egg. You can find it at Whole Foods or your local grocer in the “international aisle”.
Method:
1. Chop the tomatoes, olives, chives, basil, garlic and cucumber into pieces about half the size of the pasta and add to a large bowl.
2. Add the cooked Loprofin Penne and salad cream to the bowl and mix together.
3. Season to taste.
4. Can be chilled before serving.
