Low Protein Holiday Sugar Cookies
- 2 cups Wel-Plan Baking Mix
- ½ tsp baking powder
- ½ stick butter
- 3 tablespoons sugar
- About 3 tablespoons water (add more if needed)
- ¼ tsp vanilla essence
Preheat oven to 400 degrees.
Add baking mix and baking powder to a bowl and sift in melted magarine (a few seconds in the microwave should do the trick). Sift until the mixture resembles fine breadcrumbs. Next, add in sugar, vanilla and water and mix until it forms a soft dough.
- If you want to make cookie shapes, roll dough out on a floured surface (leftover Wel-Plan Baking Mix works well) until about ¼ inch thick. Use holiday cookie cutters to make shapes. Sprinkle on additional sugar if desired.
- If you want to make short-bread biscuits, roll into small (1 inch) balls and flatten. Sprinkle with additional sugar if needed.
Put cookies on a lightly greased cookie sheet and bake at 400 degrees for 15 minutes. Allow to cool and then decorate as desired!
Makes about 12 cookies.
