This one is a little bit higher in phe. . . but is too tasty to exclude. I found the recipe online and then modified it a bit. If you need to lower the phe content, try halving the amount of squash, it's still quite tasty. Also, it's vegan :-) !
Ingredients:
1- T. Olive Oil
1- medium onion
1 -clove garlic
1 -14 oz can of Swanson's clear vegetable broth (I chose this brand because it is phe free)
1/4 c. apple juice
2 - 12 oz. boxes of frozen winter squash (or 1 for lower phe content)
2 t. curry powder
1/2 cup Rice Dream rice milk (again, I chose the brand for being the lowest in phe)
1. In saucepan heat oil over medium heat. Cook onion and garlic in oil 3-5 minutes stirring frequently, until tender.
2. Stir in broth, apple juice, squash (thawed) and curry powder. Bring to a boil, then bring down to simmering, and simmer for 5 min. stirring occasionally.
3. Stir in the Rice Dream and cook 3-5 minutes, do not boil.
